Red Lentil Soup

Ingredients
1 tb olive oil
1 medium onion, diced
1 large potato
2 large carrots
1 red bell pepper
1 medium ripe tomato, skin removed
300 g red lentils, rinsed and drained
1 bay leaf
1 litre hot water
1 vegan vegetable stock cube crumbled,
Salt and pepper to taste



Instructions:
1. Cut all the veggies evenly.
2. Heat oil in a large pot.
3. Add the onion and sauté until translucent.
4. Add the veggies and cook until soft but not mushy.
5. Add the rest of the ingredients, stir, and bring to a boil.
6. Reduce heat, cover, and cook until the lentils are soft.
7. Puree using an immersion blender, food processor, or regular blender until it reaches a smooth consistency. You could also leave the soup chunky.
8. Adjust seasoning and serve.
